#149   Mango & Pineapple

with Carrots

Variations on a Theme, Week 2: Mango & Pineapple

Carrots for the fifth variation of our Mango & Pineapple series. I must confess that carrots are not one of my favorite ingredients for juices and smoothies. They have a very specific and dominant flavor, and it's not one that I actually appreciate. In any case, I don't hate them, and they are healthy. I would only reduce a little bit the amount I used for this recipe for a more flavorful and still nutritious juice.

Juice #149

This recipe makes 2 cups (16 fl.oz.)
Total Calories = 112.86 approximately
Calories per Cup = 56.43, approximately

Mango & Pineapple
with Carrots

Ingredients
• 1/3 of a Mango, washed, peeled, cut in small pieces (3.46 oz) (54 Cal)
• 1 slice of Pineapple, ready to eat, cut in small pieces (3.21 oz) (44.1 Cal)
• ½ cup of shredded Carrots, ready to eat (1.23 oz) (14.76 Cal)
• 2 cubes of Ice*
• 1 cup of Water

How to Prepare It
Put all the ingredients inside the cup of a small blender (or the single serve cup of a regular blender) and blend everything very well for at least 1 minute. For a better result, put the ice cube between the mango and the rest of the ingredients.

*Note 1: The ice helps to better grind the ingredients.
Note 2: You can strain the juice, but it's not necessary.

Manga & Abacaxi

#132  Canned Tomatoes

with Beets, Carrots, Green Olives & Vinegar

And the red juices are in this week!

Today I was craving tomatoes and didn't have them at home. In these situations, the canned tomatoes really come in handy, and that's why I always keep my pantry stored with a bunch of those cans. I always use the 100% natural, no salt added, diced tomatoes, Hunt brand (see picture below). (And here I am, advertising for free again!) They are already quite affordable at the grocery, and you can buy them still cheaper if you have a Sam's Club card (another free commercial). Since they last for a long time, you can buy a whole box with no fear of wasting them.

#129   Blackberries & Carrots

with Coconut Water, Lime Juice and a small touch of Acorn

A Halloween Juice

Purple and orange, in expectation of Halloween. this is a versatile two-layer juice. You can serve it simple, as in the first picture, above, and let the colors themselves tell that's Halloween. You can try a small decoration, as in the second picture, resembling a little bit the eyes and mouth of a ghost. You can use a straw to create shapes, as in the third picture, and, with a bit of patience, even come up with some kind of creepy face. Finally, you can just mix it all together (which is the ideal way of drinking it) and it will look pretty bloody (see next picture, below).

Did I mention that it also tastes good?

Juice Juice #129
October 24, 2015
This recipe makes 2½ cups (20 fl.oz.)
Total Calories = 158.39, approximately
Calories per Cup = 63.35

Blackberries & Carrots
with Coconut Water, Lime Juice and a small touch of Acorn

Ingredients
• 9 Blackberries (2.57 oz), washed (31.39 Cal)
• 1 cup of shredded Carrots, ready to eat (97 Cal)
• 1 tbsp of Green Acorn, washed, peeled, chopped (3.5 Cal)
• 8 tbsp Coconut Water (22.5 Cal)
• 1 tbsp Fresh Lime Juice (4 Cal)
• 2 cups crushed Ice*

How to Prepare It

Prepare the Purple Juice
1. Put the blackberries, 3 tbsp of coconut water and ½ cup of shredded ice inside the cup of a small blender (or the single serve cup of a regular blender).
2. Start by pulsing the blender until its content becomes more liquid and then blend it very well, for about a minute. (It's important to start by just pulsing, if you are using a small blender, since you don't want to add more liquid (we need a consistent juice) and you don't want you blender's engine to burn out, either).
3. Pour the mixture into a tall glass and set it aside.
4. Rinse the blender's cup.

Prepare the Orange (color) Juice
1. Put the carrots, acorn, 5 spoons of coconut water and ½ cup of shredded ice inside the blender's cup.
2. Repeat step 2 as for the purple juice.

"Assemble" your Juice
1. Carefully cover the purple juice with a layer of shredded ice (½ cup).
2. Pour the orange (color) juice on top of it, slowly, trying to not disturb the lower layer.

If you want to decorate your juice
1. Cover the orange (color) juice with another layer of shredded ice  (½ cup).
2. Cut two blackberries, one along its width and one along its length. Use the two longer halves to make the eyes and one of the short halves to make the mouth.

If you want to make shapes in your juice
Insert a straw in the glass, all the way to the bottom, and pull it up gently, creating shapes as you do it.

To drink your juice
Remove (eat) the blackberries you used for decoration. Mix everything together, with the straw. It will be more flavorful and get a bloody color, appropriate for the occasion.

*Note: The ice helps to better grind the ingredients. Generally, you can use ice cubes instead, but in this case, the shredded ice works better (since we are not using water). If you don't have an ice crusher on your refrigerator's door, you can do it by hand: wrap 6-8 ice cubes tightly with a clean dish cloth and crush them with a hammer (like the one you use to soften the meat). Do not crush the ice in the blender, since you want it crushed into somewhat large pieces.

Amora-Preta & Cenoura

4. Enxague o copo do liquidificador.

Prepare o Suco Laranja (cor)
1. Coloque a cenoura, 5 colheres de sopa de água de coco e ½ xícara de gelo triturado dentro do copo do liquidificador.

#119     Tangerine, Carrots & Avocado

For a creamy beverage, nothing like adding some avocado. What's better, a small amount is enough for a smooth consistence and doesn't change the main flavor of the juice.

Bergamota, Cenoura & Abacate

#90     Everything that Fits (2)

I had so many ingredients still in the fridge that I was not able to use for the recipe yesterday, that today I decided to prepare a second "Everything that Fits". This one is very different from the yesterday's, though, and it's much less caloric. It has only vegetables as ingredients and some condiments, including salt (or No Salt, which has no Sodium). It tastes like a wonderful salad!

I can't deny that I have a real crush on salad-like juices. They are SO delicious!

Recipe #53 - Soup 1 (Potato, Peas, Carrots, Beef Stock, Olive Oil, Salt) You've never prepared soup like this!

#53 Potato, Sugar Snap Peas & Carrots

Hot "Juice" (aka Soup)

Upon request of family and friends in the very south of Brazil,

where it's very cold at this time of the year

Coming back from the dentist, today, after procedures in both sides of my mouth, I didn't feel like chewing anything, even though I was starving. That's when I realized I had the perfect excuse to finally respond to the requests from a couple of family members and friends from Brazil.

You know, it's winter now in Brazil. And winter in the very south of Brazil can be really, really cold. It's not like our snowy, dry cold in Colorado. It's a wet cold that penetrates your bones and stays there forever, no matter how many layers of clothes you wear or how many blankets you cover yourself with at night.

Most of my friends and family members told me that they don't feel like drinking cold juices at all, at this moment, and a couple of them actually suggested/asked me to publish some soup recipes!

Well... I thought, some soups are nothing else than hot vegetable juices, correct?

So today I'm bringing to you our very first "hot vegetable juice". I hope you'll enjoy it as much as I believe my folks in Brazil will!

Potato, Sugar Snap Peas & Carrots
Hot "Juice" (aka Soup)

Ingredients
• 1 large potato (Russet) (12.9 oz peeled) (293 Cal)
• 2 oz Sugar Snap Peas with pods (23 Cal)
• 2 small Carrots, snack size, ready to eat (0.35 oz) (4 Cal)
• 1 tsp Knorr Homestyle Stock, Beef (10 Cal)
• 1 pinch (1/16 tsp) Olive Oil, Extra Virgin (2.5 Cal)
• ¼ tsp Salt
• ½ cup crushed Ice (or 2 cubes)*
• 1 cup Water
• 4 Ice cubes

How to Prepare It
1. Wash the potato carefully, peel it, chop it and put it inside the cup of a small blender.
2. Add ¼ cup of crushed ice (or 1 cube) and ½ cup of water and blend it well, for around 1 minute.
3. Wash the peas carefully, chop them and put them in the blender together with the already blended potatoes.
4. Chop the carrots and put them inside the cup.
5. Add ¼ cup of crushed ice (or 1 cube), ½ cup of water, the stock, olive oil and salt, and blend everything well, again, for around 1 minute.
6. Strain the mixture into a small saucepan (push the mixture against the walls of the strainer) and bring it to a boil, uncovered, over high heat.
7. Lower the heat to medium and let it cook for ten minutes. Stir almost constantly.
8. Pour the mixture into two coups and add 2 cubes of ice in each cup to cool it a bit down. Your "hot vegetable juice" is ready to enjoy!

Juice #38 - The Four-layered (Pineapple, Strawberries, Blueberries, Carrots, Kale, Orange Juice, Homemade Pomegranate Juice, Coconut Water) It's beautiful!

#38 Another Juice Art

Okay, let's be honest here. This juice tastes really good, but the main reason you'll prepare it is to show off! Why should you serve a plain, regular juice to your guests, when you can wow them with something totally beautiful AND tasty? An yes, you can serve it to more people. It requires a little more work than preparing an everyday juice, but the results are totally worth it!

Juice #38
July 1st, 2015
This recipe makes 3½ cups (28 fl oz)
Total Calories = 226, approximately
Calories p/Cup = 64.57, approximately

Multi-color Juice with Fruit & Veggies

Ingredients
• ½ cup of Blueberries (42.5 Cal)
• 4.62 oz of Pineapple (ready to eat) (10.6 Cal)
• 2 small Carrots (snack size, ready to eat) (0.32 oz) (3.7 Cal)
• 3 leaves of Kale (1 oz without spines) (14.7 Cal)
• 1 cup of Strawberries, chopped, without their green tops (5.15 oz) (64 Cal)
• 2 tbsp of homemade Pomegranate Juice. (See Recipe #34) (3.24 Cal)
• ¼ cup of Orange Juice, bottled, 100% natural, with pulp (27.5 Cal)
• 2 tbsp of Coconut Water (5.62 Cal)
• ½ cup crushed Ice (or 4 cubes)*
• 4 cups crushed Ice**  (+1 optional)
• 2 tbsp of Water

How to Prepare It

Prepare the Blueberries
1. Wash the blueberries carefully and put them, plus the pomegranate juice and 1/8 cup of crushed ice (or 1 cube) inside the cup of a small blender.
2. Start by pulsing the blender until its content becomes more liquid and then blend it very well, for about a minute. (It's important to start by just pulsing, if you are using a small blender, since you don't want to add more liquid (we need a consistent juice) and you don't want you blender's engine to burn out, either).
3. Strain the content of the blender into a cup and set it aside.
4. Rinse the blender's cup.

Prepare the Pineapple
1. Cut the pineapple and the carrots into smaller pieces and put them inside the blender's cup.
2. Add the water and 1/8 cup of crushed ice (or 1 cube).
3. Repeat steps 2, 3 and 4 as for the blueberries. (I strained it just to be sure that there wouldn't be solid pieces left, but poured the pulp back into the juice.)

Prepare the Kale
1. Wash the Kale carefully, chop it and put it together with the orange juice inside the blender's cup.
2. Add 1/8 cup of crushed ice (or 1 cube).
3. Repeat steps 2 and 4 as for the blueberries. (I didn't strain the kale juice.)

Prepare the Strawberries
1. Wash the strawberries carefully, remove and discard their green tops, chop the strawberries, and put them together with the coconut water inside the blender's cup.
2. Add 1/8 cup of crushed ice (or 1 cube).
3. Repeat steps 2 and 4 as for the blueberries. (I didn't strain the strawberry juice.)

"Assemble" your Juice
1. Stir the blueberry juice and pour it in a tall, 28-oz (or even a bit larger) container.
2. Add 1 cup of crushed ice slowly, so that it floats on top of the juice.
3. Repeat steps 1 and 2, successively, for the pineapple juice, the kale juice and the strawberry juice (additional layer of crushed ice on top of the strawberry juice is optional).
6. Insert a long straw slowly into the container with the juice, trying not to disturb its layers.***

*Note 1: The ice helps to better grind the ingredients.
**Note 2: For this juice you will need some crushed ice.
***Note 4: When you start drinking, you can start stirring the juice slowly to create beautiful and artistic color effects. After drinking some, you can completely stir it to mix the flavors (the flavor is delicious when you mix everything). Just be warned that you'll have another "brown juice" when you mix everything together!

4. Enxague o copo do liquidificador.

Prepare o Abacaxi

Prepare a Couve
