#196  Pineapple (canned), Watermelon, Tangerine & Ugli Fruit

with Lemon, Lime and Ginger

The Citric Week, Recipe 6

This is an interesting combination, with the dominance of pineapple's flavor. Because it's canned, the pineapple provides enough sweetness to neutralize the acidity of the other ingredients (and the watermelon helps with this process also).

Juice #196
January 1st, 2016
This recipe makes 2 cups (16 fl.oz.)
Total Calories = 139.36, approximately
Calories per Cup = 69.68, approximately

Pineapple (canned), Watermelon, Tangerine & Ugli Fruit
with Lemon, Lime and Ginger

Ingredients
• ½ cup (3.28 oz) of canned Pineapple, chunks (I used Dole) (53.01 Cal)
• ½ slice of Watermelon, washed, peeled, cut in pieces (2.54 oz)  (21.6 Cal)
• 1 Clementine/Cutie, washed, peeled, separated into segments (2.01 oz)  (30.74 Cal)
• 2 segments of Ugli Fruit, washed, peeled, seeds removed, each piece cut in half (2.57 oz)  (27 Cal)
• ¼ Lemon, washed, peeled, seeds removed (0.40 oz)  (1.16 Cal)
• 1 slice of Lime, washed, peeled (0.21 oz)  (1.8 Cal)
• 1 slice of Ginger, washed, chopped (0.18 oz)  (4.05 Cal)
• 3 cubes of Ice*
• ¾ cup of Water

How to Prepare It
Put all the ingredients inside the cup of a small blender (or the single serve cup of a regular blender) and mix everything for around 1 minute. For a better result, put the ingredients in the following order: ugli fruit, lemon, ginger, 1 cube of ice, lime, cutie, 1 cube of ice, watermelon, pineapple, 1 cube of ice.

*Note 1: The ice helps to better grind the ingredients.
Note 2: It's not necessary to strain this juice.

#193  Pineapple (canned), Ugli Fruit & Lemon

with Molasses

The Citric Week, Recipe 3

This juice came out quite good, though with a very dominant flavor of molasses (which shouldn't be a problem if you like its flavor). Calories are very high, so this is not the best juice for those who struggle to not gain weight.

#86    Pink Lemonade: a new attempt

This is the second time I try to make Pink Lemonade and, though MUCH better than the first attempt, I still don't feel really happy with the result. It was tasty and refreshing, no doubt, but I wanted it to be absolutely, outstandingly delicious. Anyway, I'll keep trying it in the future, changing the ingredients a little bit here and there.

Juice #86
August 24, 2015
This recipe makes 3 cups (24 fl.oz.)
Total Calories = 59.3 approximately
Calories per Cup = 16.9, approximately

Pink Lemonade

Ingredients
• 1 Lemon, washed, peeled, white part and seeds removed (1.52 oz) (12.47 Cal)
• 1.76 oz of Strawberries, washed, green tops removed, cut in pieces (16.83 Cal)
• 1 tbsp Simple Syrup (40 Cal)*
• 3 cubes of Ice**
• 3 cups of Water

How to Prepare It
1. Put all the ingredients (except for 1 cup of water) inside the cup of a small blender (or the single serve cup of a regular blender) and mix everything well for at least 1 minute.
2. Pour the juice into a large, 24-oz glass, add the rest of the water and stir it.

*Note 1: I used "Master of Mixes" Simple Syrup from 100% Cane Sugar - Cocktail Essentials
**Note 2: The ice helps to better grind the ingredients. I also added some extra ice for coolness.
Note 3: You can strain the juice, but it's not necessary at all.

Limonada Cor-de-Rosa: nova tentativa

Ingredientes
• 1 Limão Amarelo (Siciliano), lavado, descascado, parte branca e sementes removidas (43g) (12.47 Cal)

Tips about what DOES NOT work

As I said before, I think I should have called this blog "Juice Lab", because that's exactly what it is. All recipes are created as I start working (I measure everything and write it down as I prepare the juice), and I never know what they are going to taste like. So far, I can affirm without any doubt that I've had almost 100% of success. Most of the recipes, indeed, are heavenly delicious!

After I finish preparing the recipe, I take the pictures and only then I'll drink the juice and learn how it tastes. In 48 occasions, I really liked what I tasted, even when I created recipes with something that I am not particularly fond of, like mango, or with something that came out plain ugly brown in color (but still delicious).

Today was one of those two unhappy moments. I prepared a beautiful Pink Lemonade, for the first time geared to a group (so far my recipes had been created mostly for single servings and a couple of times for double servings). It was so beautiful that I decided to show you the pictures, even though I am not going to publish the recipe.

What went wrong, then? I think I used an amount of ingredients that would require at least three times the amount of water and six times the amount of sugar! That's what I did to drink it, and then it WAS delicious, but too difficult to calculate the correct proportion of ingredients to have it published.

So let's make this post today about tips on what DOES NOT work.

Tip n. 1
Lemon, particularly when we use the whole fruit, is VERY acid. It requires a lot of water and/or a lot of sugar to taste really good (even honey, agave or Maple syrup don't seem to be strong enough to brake the acidity when used in reasonable amounts).

Tip n. 2
Lemon refuses (skin, pith and seeds) are still MORE acid, and do not result well when cooked, as I did with the refuses of other fruits I've used in previous recipes. I cooked the refuses with strawberries and honey, but wasn't able to drink it. It's a kind of acidity beyond any possibility of drinking it.

Conclusion
I leave you today without a recipe, but with beautiful pictures and two lessons. Better than nothing, correct? Tomorrow I'll be back with a totally delicious recipe. That's a promise!

Juice #47 - All-citric (Orange, Lemon, Lime, Tangerine Juice) I added some sugar, but maybe you won't need it.

#47 An All-citric Juice

Today I'm bringing to you a delicious beverage made of four citric fruits: orange, lemon, lime and tangerine (juice). It was a little bit too acid for my taste, but, again, I am not a great lover of acid drinks. I added a spoon of sugar (I never add sugar to anything, so I can indulge from time to time), in addition to the agave, and then it was perfect. I believe, however, that a lot of people will love it without the extra sugar.

Speaking of sugar, I'm starting to publish the amount of calories per cup, also, with this recipe, and that will be the number used to label each juice. I realized that since the volume of juice isn't always the same for each recipe, I should have a measure that could be compared. I'll be changing the previous recipes, also, so that the calories displayed on the labels reflect a fair number. You'll find that most of the recipes I create are actually very low in calories if you look at their caloric value per cup.

Juice Juice #47

This recipe makes 3½ cups (28 fl.oz.)
Total Calories = 238, approximately

Orange, Lemon & Lime
with Tangerine Juice

Ingredients
• 1 large Orange (7 oz without skin and pith) (91.5 Cal)
• 1 Lemon (2 oz without skin, pith and seeds) (17 Cal)
• 1 Lime (1.7 oz without skin, pith and seeds) (14.5 Cal)
• ½ cup Tangerine Juice, bottled (55 Cal)
• 1 cup crushed Ice (or 2 cubes)*
• 2 cups Water

How to Prepare It
1. Wash the orange carefully, peel it, remove its pith (white part), cut it in pieces and put them inside the cup of a small blender.
2. Wash the lemon carefully, peel it, remove its piht and seeds, cut it in pieces and put them together with the orange.
3. Repeat step 2 for the lime.
4. Add the tangerine juice, the ice and 1 cup of water and blend everything well for around 1 minute.
5. Cover the blender's lid with a thick layer of paper towel, press the paper against the lid and shake the blender's cup vigorously with both hands.
6. Blend the juice again for at least 30 seconds.
7. Repeat steps 5 and 6 three times to make your juice really smooth.**
8. Pour the juice into a very large glass, add 1 cup of water to the empty blender's cup, shake it and pour this water inside the cup with the juice. Stir it and add a few cubes of ice if you would like a very cold drink.

*Note 1: The ice helps to better grind the ingredients.
**Note 2: You can strain the juice, but it's not necessary.

Juice #9 - The Tart (Lemon, Lime, Avocado, Coconut Water) For those who like it tart.

#9    Lemon, Lime & Avocado

If you are one of those folks who like the tartness of lemon, than this juice is for you!

For me, it’s a bit too tart (though very flavorful), so I came up with a way of making it perfect for my taste without adding sugar: I made two glasses of juice out of one by pouring half of the content in another glass and adding water to both glasses to fill them up. I ended up with juice enough for two people, using the same amount of ingredients, and still reduced the number of calories for each portion by one-half. Not a bad deal!

The amount of avocado used in this recipe does not contribute to its flavor since the lemon and lime have both a very strong taste. The role of the avocado, in this case, is to add texture and color to the juice.

Concentrated (right) / Diluted (left) - Concentrado (esquerda) / Diluído (direita)

Juice #9
June 2, 2015
This recipe makes 2 or 4 cups (16 or 32 fl oz) depending on your taste
Total Calories = 116.5 approximately (or 58.25 if you divide the juice in two portions)
Calories per cup = 58.25 (concentrated); 29.1 (diluted) (approximately)

Lemon, Lime & Avocado

Ingredients
• 1 Lime, medium size (2.6 oz) (13 Cal)
• 1 Lemon, medium size (3.03 oz) (10 Cal)
• 1 small piece of Avocado (1.02 oz) (48.5 Cal)
• 1 cup Coconut Water (45 Cal)
• 1 cup crushed Ice (or 3 cubes)*
• Water enough to fill the glass/glasses

How to Prepare It
1. Peel the lime and remove its white internal skin. Cut it in half and remove the white part (like a thread) in the middle of the fruit. Cut the lime in pieces andr emove all its seeds. Add the pieces to the cup of a small blender.
2. Repeat the process above for the lemon.
3. Peel the avocado, cut it in smaller pieces and add them to the blender’s cup.
4. Add the coconut water and the ice to the rest of the ingredients.
5. Blend everything very well, for at least 1 minute.
6. Strain the content of the blender’s cup, little by little, into a 16-oz glass using a small colander. Steer the juice in the colander as you strain it and empty the colander of its residual paste before pouring more juice into it.
7. Add around 1 ½ cup of water to the blender’s cup and shake it to mix with whatever of the mixture remained in the cup.
8. Strain the water from the blender’s cup into the glass containing the previously strained juice until the glass is full.

*Note 1: The ice helps to better grind the ingredients.
*Note 2: If you prefer the less tart version of the juice, pour half of the glass’ content into a second 16-oz glass and fill up the glasses with more water.

Juice #4 - Yellow Juice (Orange, Pineapple, Peach, Lemon, Coconut Water) A fruit-only delight!

#4    Yellow Juice

Somebody voted for “fruit only” juices, so here we go. Notice, however, that “fruit only” juices are generally more caloric than the mixed and “vegetable only” juices.

Juice #4
May 28, 2015
This recipe makes 3 cups (24 fl oz)
Total Calories = 232, approximately
Calories per cup = 77.3

Yellow Juice

Ingredients
1 Orange, medium size (62 Cal)
1 Lemon, medium size (17 Cal)
2 oz Pineapple (25 Cal)
1 White Peach, medium size (38 Cal)
2 cups Coconut Water (90 Cal)
¼ cup shredded Ice (or 2 cubes)*

How to Prepare It
1. Peel the orange and remove the white part from its inside. Cut the orange in 4 pieces and put them into a small blender's cup.
2. Peel the lemon and remove all its pith, including the inside (it’s healthy but too bitter, and would require the use of sugar, which we are trying to avoid as much as possible). Cut the lemon in 4 pieces and add them to the content of the cup.
3. Cut the pineapple into smaller pieces and add them to the cup.
4. Peel the peach, discard its pit, cut the peach in pieces and add them to the cup.
5. Add the Ice and the Coconut Water to the cup.
6. Blend everything very well, for at least 1 minute.
7. Strain the juice little by little into a 20-oz mug using a small colander. Steer the juice in the colander with a small spoon as you strain it and empty the colander of its residual paste before pouring more juice into it.
8. If you would like your juice to be really cold, add some ice cubes.

*Note: The ice helps to better grind the ingredients.

Suco Amarelo

Suco No 4
28 de maio de 2015
Esta receita faz 3 xícaras (709 ml)
Calorias totais = 232, aproximadamente
Calorias por xícara = 77,3

Suco Amarelo

Ingredientes
1 Laranja de tamanho médio (62 Cal)
1 Limão amarelo (Siciliano) de tamanho médio (17 Cal)
59g de Abacaxi (25 Cal)
1 Pêssego branco de tamanho médio (38 Cal)
2 xícaras de Água de Coco (90 Cal)
¼ xícara de Gelo triturado (ou dois cubos)*

Como preparar
5. Adicione o Gelo e a Água de Coco.
6. Misture bem, por pelo menos 1 minuto.
