#79    Strawberry-Vanilla Wonder


Oh-my-goodness!!! Is this delicious or what? Is it a juice? Is it a smoothie? Is it a float? Yes, it's all of the above. And, believe me, it could NOT taste better than it tastes! Yes, yes... it is caloric, of course. But, as I said before, we must be allowed to indulge from time to time. So go ahead. Today is your time. Indulge yourself!

This recipe makes 2 cups (16 fl.oz.)
Total Calories = 311.6, approximately
Calories per Cup = 155.8, approximately
Calories for the float (optional) = 50, approximately

Strawberry-Vanilla Wonder 

Ingredients
• 3.92 oz Strawberries, washed, green tops removed, cut in pieces (36.6 Cal)
• ¼ cup Vanilla Ice Cream (50 Cal)
• ¼ cup Strawberry Sorbet (65 Cal)
• 1 ½  cups Strawberry Nectar
• For the float (optional): ¼ cup Vanilla Ice Cream (50 Cal), 1 strawberry (washed, green top on)

How to Prepare It 
1. Put all the ingredients (except for the float) inside the cup of a small blender (or the single serve cup of a regular blender) and mix everything well for at least 1 minute.
2. Pour the juice in a large glass and  (optional) add a small scoop (¼ cup) of Vanilla Ice Cream and a strawberry floating on top of it.


Morango-Baunilha Fenômeno 


Minha Nossa!!! Isso é delicioso, ou o quê? É um suco? É uma batida? É um "float"? Sim, todas as opções estão corretas. E, acredite, NÃO poderia ser mais saboroso do que é! Sim, sim...é calórico, naturalmente. Mas, como disse antes, precisamos nos permitir uma certa indulgência de tempos em tempos. Então vá em frente. Seu tempo é hoje. Permita-se!

Esta receita faz 2 xícaras (473ml)
Calorias totais = 311,6 aproximadamente
Calorias por xícara = 155,8 aproximadamente
Calorias para o "float" = 50, aproximadamente

Morango-Baunilha Fenômeno

Ingredientes 
• 111g de Morangos, lavados, topo verdes removidos, cortados em pedaços (36,6 Cal)
• ¼ xícara de Sorvete de Baunilha (50 Cal)
• ¼ xícara de Sorbet de Morango (65 Cal)
• 1 ½  xícaras de Néctar de Morango
• Para o "Float" (opcional): ¼ xícara de Sorvete de Baunilha (50 Cal), 1 morango (lavado, com topo verde)

Como preparar
1. Coloque todos os ingredientes (exceto os ingredientes para o "float") dentro do copo de um liquidificador pequeno (ou copo de medida individual de um liquidificador de tamanho regular) e bata tudo por pelo menos 1 minuto.
2. Derrame a mistura dentro de um copo grande e (opcional) adicione uma colher de sorvete (¼ de xícara) de Sorvete de Baunilha e um morango, boiando no suco.

What a beautiful color! Coconut is its dominant flavor, and this is a very rich juice, which makes you feel pretty satisfied after drinking only a cup of it. Though high in calories, it could still work for those who are counting them, as part of their breakfast or as a fulfilling snack in between meals.

This recipe makes 3 cups (24 fl.oz.)

Coconut & Strawberry with Açaí Juice and Orange Juice

Ingredients
• 1 cup of homemade liquefied Coconut (see recipe #52) (332 Cal)
• 2.43 oz Strawberries (green tops removes) (19.5 Cal)
• ½ cup Açaí Juice, bottled (70 Cal)*
• ½ cup Orange Juice, bottled, 100% natural, with pulp (55 Cal)
• ½ cup crushed Ice (or 2 cubes)**
• 1 cup Water

How to Prepare It 
1. Wash the strawberries carefully, remove their green tops and cut them in small pieces directly inside the cup of a small blender.
2. Add the other ingredients (except for the water) and blend everything well, for around 1 minute.
3. Strain the juice into a 24-oz glass, using a small strainer. Discard the pulp left in the strainer before pouring more juice.
4. Add the water and stir it.
5. Add ice for a cooler drink.

*Note 1: I used Sambazon, organic
**Note 2: The ice helps to better grind the ingredients.

Que cor linda! Coco é o sabor dominante, e este é um suco muito substancial que faz com que você se sinta satisfeito após beber um copo, apenas. Apesar de alto em valor calórico, poderia, ainda assim, ser usado por aqueles que estão contando calorias, como parte do café da manhã ou como um lanche entre refeições.

Calorias totais = 476 aproximadamente
Calorias por xícara = 158,8 aproximadamente

Coco & Morango com Suco de Açaí e Suco de Laranja

Ingredientes 
• 1 xícara de Coco liquidificado (ver receita n. 52) (332 Cal)
• 69g de Morangos (sem os topos verdes) (19.5 Cal)
• ½ xícara de Suco de Açaí engarrafado (70 Cal)*
• ½ xícara de Suco de Laranja engarrafado, 100% natural, com polpa (55 Cal)
• ½ xicara de Gelo triturado (ou 2 cubos)**
• 1 xícara de Água

Como preparar
1. Lave bem os morangos, remova os topos verdes e corte-os em pedaços diretamente dentro do copo de um liquidificador pequeno.
2. Adicione os outros ingredientes, exceto pela água, e bata tudo muito bem, por pelo menos 1 minuto.
3. Coe a mistura num copo grande usando um coador pequeno. Remova a polpa que fica no coador antes de acrescentar mais líquido.
4. Adicione a água e misture.
5. Para uma bebida mais refrescante, adicione gelo.

*Observação 1: Usei Sambazon, orgânico. 
**Observação 2: O gelo ajuda a triturar melhor os ingredientes.

#53 Potato, Sugar Snap Peas & Carrots

Hot "Juice" (aka Soup)

Upon request of family and friends in the very south of Brazil, 

where it's very cold at this time of the year


Coming back from the dentist, today, after procedures in both sides of my mouth, I didn't feel like chewing anything, even though I was starving. That's when I realized I had the perfect excuse to finally respond to the requests from a couple of family members and friends from Brazil.

You know, it's winter now in Brazil. And winter in the very south of Brazil can be really, really cold. It's not like our snowy, dry cold in Colorado. It's a wet cold that penetrates your bones and stays there forever, no matter how many layers of clothes you wear or how many blankets you cover yourself with at night.

Most of my friends and family members told me that they don't feel like drinking cold juices at all, at this moment, and a couple of them actually suggested/asked me to publish some soup recipes!

Well... I thought, some soups are nothing else than hot vegetable juices, correct?

So today I'm bringing to you our very first "hot vegetable juice". I hope you'll enjoy it as much as I believe my folks in Brazil will!



"Juice" #53

This recipe makes 2 cups (16 fl.oz.)
Total Calories = 333, approximately
Calories per Cup = 166.5, approximately

Potato, Sugar Snap Peas & Carrots
Hot "Juice" (aka Soup) 

Ingredients
• 1 large potato (Russet) (12.9 oz peeled) (293 Cal)
• 2 oz Sugar Snap Peas with pods (23 Cal)
• 2 small Carrots, snack size, ready to eat (0.35 oz) (4 Cal)
• 1 tsp Knorr Homestyle Stock, Beef (10 Cal)
• 1 pinch (1/16 tsp) Olive Oil, Extra Virgin (2.5 Cal)
• ¼ tsp Salt
• ½ cup crushed Ice (or 2 cubes)*
• 1 cup Water
• 4 Ice cubes

How to Prepare It 
1. Wash the potato carefully, peel it, chop it and put it inside the cup of a small blender.
2. Add ¼ cup of crushed ice (or 1 cube) and ½ cup of water and blend it well, for around 1 minute.
3. Wash the peas carefully, chop them and put them in the blender together with the already blended potatoes.
4. Chop the carrots and put them inside the cup.
5. Add ¼ cup of crushed ice (or 1 cube), ½ cup of water, the stock, olive oil and salt, and blend everything well, again, for around 1 minute.
6. Strain the mixture into a small saucepan (push the mixture against the walls of the strainer) and bring it to a boil, uncovered, over high heat.
7. Lower the heat to medium and let it cook for ten minutes. Stir almost constantly.
8. Pour the mixture into two coups and add 2 cubes of ice in each cup to cool it a bit down. Your "hot vegetable juice" is ready to enjoy!

*Note 1: The ice helps to better grind the ingredients.

"Suco" Quente (também conhecido como Sopa)

de Batata, Ervilha & Cenoura

A pedido de familiares e amigos no sul do Brasil, 

onde está fazendo muito frio nesta época do ano



Voltando do dentista, hoje, após procedimentos nos dois lados da boca, não sentia muita vontade de mastigar, apesar de estar faminta. Foi quando me dei conta de que essa era a desculpa perfeita para finalmente responder aos pedidos de alguns amigos e membros da família.

Como você sabe perfeitamente, é inverno no Brasil, agora. E inverno no sul do Brasil pode ser muito, muito frio. Não é como o frio seco dos dias nevados aqui no Colorado. É um frio que penetra nos ossos e fica lá para sempre, não importa quantas camadas de roupa a gente vista e quantos cobertores use para dormir.

A maioria dos meus amigos e familiares disseram-me que não sentem nenhuma vontade de beber sucos gelados neste momento, e alguns na verdade me sugeriram/pediram que publicasse algumas receitas de sopa!

Bem... pensei, algumas sopas nada mais são do que sucos quentes de vegetais, certo?

Assim que hoje estou trazendo para vocês nosso primeiríssimo "suco quente de vegetais". Espero que vocês, aí no Brasil, curtam bastante!

Suco No 53

Esta receita faz 2 xícaras (473ml)

"Suco" Quente (também conhecido como sopa)
de Batata, Ervilha & Cenoura

Ingredientes 
• 1 Batata grande (368g sem casca) (293 Cal)
• 57g de Ervilhas com as vagens (23 Cal)
• 2 Cenouras pequenas, tamanho aperitivo, prontas para consumo (10g) (4 Cal)
• 1 colher de chá de Caldo de Carne Knorr gelatinoso (ver fotos 5 e 6) (10 Cal)
• 1 pitada (1/16 colher de chá) de Azeite de Oliva Extra Virgem (2.5 Cal)
• ¼ colher de chá de Sal
• ½ xícara de Gelo triturado (ou 2 cubos)*
• 1 xícara de Água
• 4 cubos de Gelo

Como preparar
1. Lave a batata cuidadosamente, descasque-a, parta-a em pedaços pequenos e coloque-os dentro do copo de um liquidificador pequeno.
2. Adicione ¼ de xícara de gelo triturado (ou 1 cubo) e ½ xícara de água e bata tudo muito bem, por pelo menos 1 minuto.
3. Lave as ervilhas cuidadosamente, corte-as em pedaços pequenos e coloque-os no liquidificador junto com as batatas já batidas.
4. Corte as cenouras em pedaços pequenos e coloque-os no liquidificador.
5. Adicione ¼ xícara de gelo triturado (ou 1 cubo), ½ xícara de água, o caldo de carne, o azeite de oliva e o sal e bata tudo muito bem, novamente, por pelo menos 1 minuto.
6. Coe a mistura dentro de uma panela pequena (amasse a mistura contra o coador) e deixe ferver, sem tampa, em fogo alto.
7. Baixe o fogo para médio e deixe cozinhar por 10 minutos, mexendo quase que constantemente.
8. Derrame a mistura em duas canecas e adicione 2 cubos de gelo em cada uma, para esfriar um pouco. Seu "suco quente de vegetais" está pronto para beber!

*Observação 1: O gelo ajuda a triturar melhor os ingredientes.
