Juice #241 - Plantappleney (Plantain, Pineapple, Honey) A bit of an odd flavor...

Plantains are supposed to be cooked. According to my quick research on the Internet, nutritionists don't recommend eating them raw because they are not easily digested. I did use it raw for this juice, however, and didn't feel any discomfort during the rest of the day. It tastes good, actually, less sweet than a regular banana, and its flesh is a bit more consistent.

The juice's flavor resulted a bit odd, not one of the best I've already achieved. The pineapple was completely subdued, and I could have used a smaller amount of honey. The juice came out quite thick (though not revoltingly thick) and creamy.

Plantain & Pineapple

Ingredients
• 1 Plantain, raw, washed, peeled, cut into small pieces (5.22 oz) (180.56 Cal)
• ¼ cup of Pineaple, ready to eat, cut into small pieces (1.90 oz) (26.46 Cal)
• 1 tbsp of Honey (64 Cal)
• 2 cubes of Ice*
• 1½ cups of Water

How to Prepare It
Put all the ingredients in the cup of a small blender (or the single serve cup of a regular blender) and mix everything for around 1 minute. For a better result, put the ice between the plantain and the pineapple.

*Note 1: The ice helps to better grind the ingredients.
Note 2: This juice doesn't need to be strained.


Plantains - Bananas-da-Terra

A plantain, or cooking plantain (...) is one of the less sweet cultivated varieties (...) of the genus Musa whose fruit is also known as the banana. Plantains are typically eaten cooked, sometimes along with their leaves and fibers, and are usually large, angular and starchy, in contrast to common or "dessert" bananas, which are typically eaten raw and without the peel, usually being smaller, more rounded and sugary; however, there is no formal scientific distinction between plantains and bananas. Bananas-da-Terra devem ser consumidas cozidas. De acordo com minha pesquisa rápida na Internet, os nutricionistas não recomendam consumi-las cruas por serem difíceis de digerir. Neste suco, porém, utilizei a banana crua e não senti nenhum desconforto durante o dia. O sabor é bom, menos doce do que o da banana comum, e a polpa é mais firme.

O sabor deste suco ficou meio estranho, não um dos melhores que já criei. O abacaxi foi completamente subjugado, e eu poderia ter usado um pouquinho menos de mel. A consistência ficou bem grossa (mas não enjoativa ou repugnante) e cremosa.

• 1 colher de sopa de Mel (64 Cal)
• 2 cubos de Gelo*
• 1½ xícaras de Água

Como preparar

• ½ cup of frozen Yellow Peach, cut in small pieces (3.32 oz) (33.34 Cal)

#191  Ugli Fruit & Banana

After two days off because of Christmas, here we are back to our recipes, and starting a new week where every juice will carry at least one citric ingredient.

I'm excited to have found at the grocery a citric fruit that I had never seen before. It's called Ugli Fruit (that's correct: Ugli with "i", not "y"). It's a Jamaican fruit, similar to a gigantic tangerine with a green peel (see picture below). It has a very thick skin, but still easy to remove, as it happens with the tangerine's. It's quite acidic. I wonder if they called the fruit "ugli" because it's supposed to be ugly. The one I bought is not ugly at all; just odd, because of its size. The interior, indeed, with its huge segments, is really beautiful.

The juice came out quite good. The banana and honey helped neutralizing a bit the acidity of the fruit.

Após dois dias de folga para curtir o Natal, aqui estamos novamente, de volta às nossas receitas, e começando uma nova semana em que cada suco levará ao menos um ingrediente cítrico.

Estou empolgada por haver encontrado no supermercado uma fruta cítrica que nunca havia visto antes. É chamada Ugli Fruit (Fruta Ugli) (não é "ugly", com "y"). É uma fruta da Jamaica, similar a uma gigantesca bergamota com a casca verde (ver foto acima). Tem uma casca bem grossa, mas ainda assim fácil de retirar, como a casca da bergamota. É bastante ácida. Não sei se a chamaram "ugli" por causa de "ugly", que, em inglês, significa "feio". A fruta não é feia; é apenas estranha, por causa do tamanho. O interior, na verdade, com os gomos enormes, é até mesmo bonito.

É provável que a Ugli Fruit não seja encontrada aí no Brasil. Se for o caso, basta substituí-la por bergamota, na quantidade indicada abaixo (em gramas).

O suco ficou muito bom. A banana e o mel neutralizaram um pouco a acidez da fruta.

We are starting today the Banana Week. I chose banana because it's a fruit I have used very barely so far for my recipes. As you may know (I mentioned it somewhere in the previous posts), banana has a very dominant taste, and that's why I don't generally use it as an ingredient. This week it will be different, since banana will be the main ingredient and, consequently, we should expect it to be the dominant flavor.

I first prepared the juice today with 1 cup of water, but it resulted a bit too thick and acid. I added an extra cup to the juice already blended and it tasted 100% better (for my taste naturally). You can try it the original way and, if you agree with my first impression, just start adding water until you find the right taste and consistency for you.

Estamos começando hoje a Semana da Banana. Escolhi banana por ser uma das frutas que menos utilizei como ingrediente até agora em minhas receitas. Como talvez você saiba (já foi mencionado em alguma postagem anterior), banana possui um sabor muito dominante, e é por isso que geralmente não a uso como ingrediente. Esta semana, porém, será um caso diferente, uma vez que a banana será o ingrediente básico das receitas, e, sendo assim, será de esperar que seja o sabor dominante.

Primeiro preparei o suco de hoje com uma xícara de água, mas achei a consistência um pouco grossa e o sabor um pouco ácido demais. Adicionei uma xícara extra de água ao suco já no copo, e melhorou 100% (ao menos para o meu gosto). Você pode experimentar o suco em sua forma original e, se concordar com minha primeira impressão, adicione mais água, aos poucos, até encontrar a consistência e o sabor de sua preferência.

Tangerine & Broccoli
with Lime Juice, Coconut Water and Honey

Ingredients
• 3 Tangerines, washed, peeled, separated in segments (5.93 oz) (89.04 Cal)
• 3 flowers of Broccoli (1.31 oz), washed, chopped (12.92 Cal)
• 2 tbsp Lime Juice, bottled, 100% natural (8 Cal)
• 2 tbsp Honey (128 Cal)
• 1 cup Coconut Water (47.39 Cal)
• 6 cubes of Ice*

How to Prepare It 
1. Put 2 cubes of ice in the bottom of the cup of a small blender (or the single serve cup of a regular blender) followed by the broccoli, two more ice cubes and ½ of coconut water, blend everything for at least 30 seconds. 
2. Add the rest of the ingredients to the blended juice and mix everything again for another 30 seconds.

Talvez este não seja um suco para todo dia, por causa do número um pouco elevado de calorias, mas definitivamente possui um sabor singular e refinado. Experimente, e você entenderá o que estou dizendo.

Ingredientes 
• 3 Bergamotas, lavadas, descascadas, separadas em gomos (168) (89,04 Cal)
• 3 flores de Brócolis (38g), lavadas, picadas (12,92 Cal)
• 2 colheres de sopa de Sumo de Limão Taiti, engarrafado, 100% natural (8 Cal)
• 2 colheres de sopa de Mel (128 Cal)
• 1 xícar de Água de Coco (47,39 Cal)
• 4 cubos de Gelo*

Como preparar
1. Coloque 2 cubos de gelo no fundo do copo de um liquidificador pequeno (ou o copo de medida individual de um liquidificador de tamanho normal), seguidos pelo brócolis, mais 2 cubos de gelo e ½ xícara de águade coco, bata por cerca de 30 segundos.
2. Adicione o restante dos ingredientes ao suco previamente misturado e bata tudo novamente por mais 30 segundos.

Tips about what DOES NOT work


As I said before, I think I should have called this blog "Juice Lab", because that's exactly what it is. All recipes are created as I start working (I measure everything and write it down as I prepare the juice), and I never know what they are going to taste like. So far, I can affirm without any doubt that I've had almost 100% of success. Most of the recipes, indeed, are heavenly delicious!

After I finish preparing the recipe, I take the pictures and only then I'll drink the juice and learn how it tastes. In 48 occasions, I really liked what I tasted, even when I created recipes with something that I am not particularly fond of, like mango, or with something that came out plain ugly brown in color (but still delicious).


Today was one of those two unhappy moments. I prepared a beautiful Pink Lemonade, for the first time geared to a group (so far my recipes had been created mostly for single servings and a couple of times for double servings). It was so beautiful that I decided to show you the pictures, even though I am not going to publish the recipe.

What went wrong, then? I think I used an amount of ingredients that would require at least three times the amount of water and six times the amount of sugar! That's what I did to drink it, and then it WAS delicious, but too difficult to calculate the correct proportion of ingredients to have it published.

So let's make this post today about tips on what DOES NOT work.

Tip n. 1
Lemon, particularly when we use the whole fruit, is VERY acid. It requires a lot of water and/or a lot of sugar to taste really good (even honey, agave or Maple syrup don't seem to be strong enough to brake the acidity when used in reasonable amounts).

Tip n. 2
Lemon refuses (skin, pith and seeds) are still MORE acid, and do not result well when cooked, as I did with the refuses of other fruits I've used in previous recipes. I cooked the refuses with strawberries and honey, but wasn't able to drink it. It's a kind of acidity beyond any possibility of drinking it.

Conclusion
I leave you today without a recipe, but with beautiful pictures and two lessons. Better than nothing, correct? Tomorrow I'll be back with a totally delicious recipe. That's a promise!

Dicas sobre o que NÃO dá certo 


Como mencionei antes, deveria ter chamado este blog the "Laboratório de Sucos", uma vez que isso é exatamente o que ele é. Todas as receitas são criadas conforme começo a trabalhar (peso os ingredientes e escrevo tudo enquanto preparo o suco), e nunca sei que gosto vão ter. Até agora, posso afirmar sem dúvida que obtive sucesso em quase 100% das ocasiões. A maioria das receitas, na verdade, são divinamente deliciosas!

Acabando a preparação, ocupo-me com as fotos e, só então, bebo o suco e fico sabendo que gosto tem. Em 48 das 50 ocasiões, até agora, realmente gostei do que provei, mesmo quando criei receitas com ingredientes que não aprecio muito, como manga, ou quando me deparei com uma bebida assustadoramente marrom (mas ainda com um sabor delicioso).

Hoje foi uma daquelas ocasiões sem sucesso. Preparei uma belíssima Limonada Cor-de-rosa, pela primeira vez direcionada para um grupo (minhas receitas, até o momento, foram criadas para porções individuais, na maioria, e umas duas vezes para porções duplas). O visual ficou tão bonito, que resolvi colocar as fotos aqui, ainda que não vá publicar a receita.

Então, o que deu errado? Acho que usei uma quantidade de ingredientes que requereria, no mínimo, três vezes a quantidade de água e seis vezes a quantidade de açúcar usados na receita! Foi o que fiz para beber o suco e, então, FICOU delicioso, mas muito difícil de calcular a proporção correta que deveria ser usada para os ingredientes.

Sendo assim, vamos transformar a postagem de hoje em dicas sobre o que NÃO parece dar certo.

Dica n. 1
Limão, principalmente quando usamos a fruta inteira, é MUITO ácido. Requer muita água e/ou muito açúcar para resultar num sabor verdadeiramente gostoso (mesmo mel, ágave ou xarope de Maple não parecem ser suficientemente fortes para quebrar a acidez quando usados em quantidades razoáveis).

Dica n. 2
Os refugos do limão (casca, parte branca e sementes) são ainda MAIS ácidos, e não produzem um bom resultado quando cozidos, como fiz com outras frutas usadas em receitas anteriores. Cozinhei os refugos com morangos e mel, mas não consegui beber o suco. É um tipo de acidez além do bebível.

Conclusão
Deixo vocês, hoje, sem receita, mas com algumas belas fotos e duas dicas. Melhor do que nada, certo? Amanhã voltarei com uma receita totalmente deliciosa. É uma promessa!

This recipe makes 2½ cups of juice (20 fl.oz.)

Broccoli & Lettuce
with Tangerine Juice, 
Coconut Water and Honey 

Ingredients
• 1.59 oz of Broccoli (15 Cal)
• 1.59 oz of Hearts of Romaine Lettuce (6 Cal)
• ¼ tsp of Honey (5 Cal)
• ½ cup Tangerine Juice, bottled (52 Cal)
• ½ cup Coconut Water (22.5 Cal)
• 1 cup crushed Ice (or 2 cubes)*

How to Prepare It 
1. Wash carefully the broccoli, chop it (flowers and softer stems, amount above), and put it inside the cup of a small blender.
2. Wash carefully the lettuce, chop it and put it together with the broccoli.
3. Add the rest of the ingredients and blend everything well, for around 1 minute.
4. Cover the blender's lid with a thick layer of paper towel, press the paper against the lid and shake the blender's cup vigorously with both hands.
5. Blend the juice again for at least 30 seconds.
6. Repeat steps 4 and 5 three times to make your juice really smooth.**

*Note 1: The ice helps to better grind the ingredients. 
**Note 2: You can strain the juice, but it's not necessary.

Brócolis & Alface
com Suco de Bergamota, Água de Coco e Mel

Ingredientes 
• 45g de Brócolis (15 Cal)
• 45g de Alface Romana, folhas centrais (6 Cal)
• ¼ colher de chá de Mel (5 Cal)
• ½ xícara de Suco de Bergamota engarrafado (52 Cal)
• ½ xícara de Água de Coco (22.5 Cal)
• 1 xícara de Gelo triturado (ou 2 cubos)*

Como preparar
1. Lave bem o brócolis, corte-o em pedaços pequenos (flores e caules mais macios, quantidade especificada acima) e coloque-os dentro do copo de um liquidificador pequeno.
2. Lave bem a alface, corte-a em pedaços pequenos e coloque-os junto com o brócolis.
3. Adicione os ingredientes restantes e misture tudo muito bem, por pelo menos 1 minuto.
4. Pressione uma camada grossa de papel toalha contra a tampa do liquidificador e sacuda-o vigorosamente com as duas mãos.
5. Bata a mistura, novamente, por cerca de 30 segundos.
6. Repita os passos 4 e 5 três vezes para que o suco fique bem liso.**

*Observação 1: O gelo ajuda a triturar melhor os ingredientes. 
**Observação 2: Você pode coar o suco, mas não é necessário.

Pineapple & Honey Cooked Juice

Ingredients
• 1 Pineapple
• ¼ cup of pure Honey (I used Orange Blossom Honey)
• 10 cups of Water

How to Prepare It
1. Wash the pineapple thoroughly, under hot water, using a small brush.
2. Put the pineapple on a large plate (you want to save the juice that will form during the peeling process), pick up a bread knife (yes, a bread knife) and remove the top and bottom of the fruit.
3. Hold the pineapple upright on the plate and start cutting off its skin from top to bottom, moving around until you have it all "bare". Cut the skin thick enough to remove all eyes from the flesh of the fruit. Don't worry about the waste. You won't throw the skin away, and you actually want some flesh attached to it.
4. Wash your bare fruit under cold water and store it (I like to cut it in small pieces and store it in the fridge ready to eat).
5. Cut the skin into smaller pieces and throw them in a medium size saucepan. Don't forget to add the juice that formed in the plate. If you want to waste still less of the fruit, you can cut the skin around the top and the bottom and throw those pieces also into the pan.
6. Add 6 cups of water and ¼ cup of honey, stir it, set the pan on the stove, uncovered, over high heat, and bring the mixture to a boil.
7. Lower the hit to medium and let it cook for 30 minutes.
8. Stir the content in the pot very well, crushing it with the help of two wooden spoons, add 2 cups of water and let it cook for another 30 minutes.
9. Stir the content again, crushing it as much as you can, add 2 cups of water and let it cook for 1 hour over very low heat.
10. Let the content in the pan cool down, and strain it using a large strainer.
11. Pour the juice into a container with a lid and let it cool overnight in the fridge.

You can use this concoction as an ingredient for other beverages, or just drink it as is. It is very tasty and refreshing juice!

*Note: For a less caloric juice, you can reduce the amount of honey or cook the skin with water only.

Calorias Totais = Valor desconhecido (256 Cal, aproximadamente, só para o mel. Não encontrei informação sobre o número de calorias contidas na casca do abacaxi.)
Calorias por xícara = Talvez 120 aproximadamente

Suco Cozido de Abacaxi & Mel

Ingredientes
• 1 Abacaxi
• ¼ xícara de Mel Puro (Usei Mel de Flor de Laranjeira.)
• 10 xícaras de Água

Como preparar
1. Lave o abacaxi vigorosamente com a ajuda de uma escovinha e água quente.
2. Coloque o abacaxi num prato grande (para salvar o suco que se formará durante o processo de descascar), pegue uma faca de pão (sim, uma faca de pão) e remova o topo e a parte inferior da fruta. 
3. Segure o abacaxi em pé, dentro do prato, e comece a descascá-lo, cortando a casca de alto a baixo e rodando a fruta até terminar de descascar. Corte a casca de uma grossura suficiente para remover todos os olhos do abacaxi. Não se preocupe em "poupar". Você não vai jogar a casca fora e, na verdade, deve deixar alguma polpa na casca, propositadamente.
4. Lave o abacaxi descascado com água fria e guarde-o (gosto de cortá-lo em pedaços e guardar na geladeira já pronto para comer).
5. Corte a casca em pedaços menores e coloque-os numa panela de tamanho médio. Não se esqueça de juntar o suco que ficou no prato. Se quiser aproveitar a fruta ainda mais, corte os pedaços de casca ao redor do topo e da parte inferior e junte-os à panela.
6. Adicione 6 xícaras de água e ¼ de xícara de mel, mexa e coloque a panela no fogão, em fogo alto, até ferver.
7. Reduza o fogo a médio e deixe cozinhar por 30 minutos.
8. Mexa o conteúdo na panela, amassando-o com a ajuda de duas colheres de pau. Adicione 2 xícaras de água e deixe cozinhar em fogo médio por mais 30 minutos.
9. Repita o processo de amassamento, adicione mais 2 xícaras de água e deixe cozinhar por mais 1 hora em fogo bem baixo.
10. Deixe o conteúdo da panela esfriar e coe, usando um coador grande. 
11. Derrame o suco num recipiente fechado e deixe esfriar no refrigerador de um dia para o outro.

Você pode usar esse suco como um ingrediente para outras receitas, ou pode bebê-lo assim como está. É uma bebida deliciosa e refrescante!

*Observação: Para uma bebida menos calórica, reduza a quantidade de mel, ou simplesmente deixe de usá-lo.

Juice #31 - The Refresher (Pineapple, Homemade Pineapple + Honey Cooked Juice) Very refreshing!

This is a very refreshing beverage. It has honey, so it's a little bit caloric. For this recipe, I've used a home-made Pineapple Skin + Honey concoction* (or juice) instead of water, which I cooked yesterday and had been cooling in the fridge since then. If you prefer a less sweet drink, just use water instead of the concoction, and you'll have a super-basic, delicious and refreshing pineapple-only (plus some water) juice.

Suco de Abacaxi

com Suco Caseiro Cozido de Abacaxi + Mel


Esta é uma bebida muito refrescante. Contém mel, por isso é um pouco calórica. Para esta receita, usei um suco feito da casca do abacaxi cozinhada com água e mel, o qual deixei esfriando na geladeira desde ontem. Se você preferir uma bebida menos doce, pode substituir a mistura cozida por uma xícara de água, e o resultado será um suco delicioso e refrescante feito de abacaxi e água, apenas.

*Amanhã publicarei detalhes sobre como cozinhei a casca do abacaxi.

Suco de Abacaxi
com Suco Caseiro Cozido de Abacaxi + Mel

Ingredientes
• 130g de Abacaxi descascado e partido em pedaços pequenos (64.5 Cal)
• 1 xícara de suco cozido e resfriado de Abacaxi com Mel (100 Cal, aproximadamente, só para o mel)
• 1 xícara de Gelo triturado (ou 4 cubos)*

Como preparar
1. Coloque todos os ingredientes dentro do copo de um liquidificador pequeno e bata bem, por pelo menos 1 minuto.
2. Cubra a tampa do liquidificador com uma camada grossa de papel-toalha, pressione o papel contra a tampa e sacuda o copo do liquidificador vigorosamente com as duas mãos.
3. Bata o suco novamente por pelo menos 30 segundos.
4. Repita os passos 2 e 3 duas ou três vezes para que o suco fique bem liso.**

*Observação 1: O gelo ajuda a triturar os ingredientes.
