#128   Spinach & Canned Tomatoes

with Vinegar and Salt

Very low in calories!

Today I had no time for eating before leaving for an appointment in town, but was quite hungry. I wanted something light but filling at the same time, which, I know, sounds like a contradiction. I came up with a huge glass of just spinach and tomatoes and, to make it faster, I used a can of diced tomatoes (100% natural and no salt added). Just so simple and so tasty!

Spinach & Canned Tomatoes
with Vinegar and Salt

Ingredients
• 1.76 oz of Spinach, leaves only, washed (11.5 Cal)
• 1 can of Diced Tomatoes, 100% Natural, no salt added (14.5 oz) (102.75 Cal)
• 1 tbsp Red Wine Vinegar (3 Cal)
• 1 pinch of Salt
• 6 cubes of Ice*
• 1½ cups of Water

How to Prepare It
1. Put the spinach, ½ can of tomatoes, vinegar and salt inside the cup of a small blender (or the single serve cup of a regular blender) and mix everything well for at least 30 seconds. For a better result, put the ice cubes between the spinach and the rest of the ingredients.**
2. Pour the mixture in a very large glass container.
3. Put the rest of the canned tomatoes and the water inside the blender's cup and mix it well, for at least 30 seconds.
4. Add this mixture to the one already in the glass and stir it well.

*Note 1: The ice helps to better grind the ingredients.
**Note 2: If you are using a large blender, you can mix everything together and blend for around 1 minute (in which case you'll ignore steps 2,3 and 4).
Note 3: You can strain the juice, but it's not necessary.
